​Wintry Soup
Ingredients


4 cups vegetable stock (refer below)
1/2 onion ,chopped fine
1/4 tsp ginger paste
1/4 tsp garlic paste
1/4 tsp. cumin powder
2-3 pinches turmeric powder
1 tsp curry powder
salt to taste
1/2 cup frozen corn
1/2 cup tomatoes, chopped finely
1/4 cup tomato puree
2 tbsp raw rice
2 tbsp moong dal (yellow)
1 tbsp oil

Method :
​

1. Heat oil in a pan
2. Fry onion, ginger and garlic till transparent
3. Add cummin powder, turmeric and curry powder
4. Add vegetable stock and bring it to boil
5. Add moong dal and let it cook for 2-3 minutes.
6. Add rice, corn, tomatoes and puree
7. Let it cook till rice is done
8. Serve hot. Soup sticks, pepper and salt, as desired.

Note: For vegetable stock, boil 1 onion, 1 carrot, 1/2 cup bottle gourd and 2-3 french beans in 4 cups water, till soft. Blend in mixie, strain and use.

Makes: 4-5 servings
