Vangi Bath
Ingredients


Brinjal or Egg plant pieces 3-4
Ghee or Oil 1 cup,
Tamarind Juice 1/2 cup
Turmeric Powder 1/2 t/s
Sambhar Powder 2 t/s
Coconut fresh or dry grated 1 cup
Cooked Rice 5-6 cup
Mustard seeds 1/2 t/s
Red chilies 2
Salt to taste

Instead of Sambhar Powder you can make fresh powder yourself,
Cumin seeds 2 t/s
Red chilies 4-5
Chana dal 2 t/s
Urad dal 2 t/s
Dry coconut 1/4 cup
Grind all this into fine Powder.

Method :

Fry Brinjal separately in 1/4 cup of ghee,
Heat Oil and put mustard seeds, Red chilies and fried Brinjal.
Add Tamarind juice , turmeric powder and salt ,
After 5 minutes put sambhar powder or ground fresh powder to it,
After 10-15 minutes when Brinjal is cooked ,
Add cooked rice and mix it well,
Garnish with coconut on the top,
