Sorbet au Chocolat
Ingredients :

* 2 cups mineral water
* 2/3 cup sugar
* 1 cup unsweetened cocoa, sifted
* 7 ounces bittersweet chocolate, preferably Valrhona, Lindt or Sharffenberger, broken into pieces
Method :

1. In a large saucepan, combine the water and sugar over moderate heat. Stir to combine and to dissolve the sugar.
2. Carefully add the sifted cocoa powder in a steady stream. Off the heat, add the chocolate and stir until it is thoroughly melted.
3. Sieve the mixture into a bowl. Transfer it to an ice cream make and freeze according to the manufacturer's instructions.
10 to 12 servings.
