Smoked turkey and cilantro risotto
Ingredients :

1/2 Cup onion, chopped
1 Clove garlic, minced
2 Tablespoons butter
1 Cup Arborio rice
3 Cups TURKEY BROTH
1/2 Cup skim milk
2 Tablespoons fresh cilantro, chopped
1/2 Pound SMOKED TURKEY BREAST, cut into 1/2-inch cubes
1 Medium tomato, seeded and chopped
1/2 Cup scallions, chopped

Method :

​

1. In 3-quart saucepan, over medium heat, saute onions and garlic in butter 4 to 5 minutes or until onions are translucent.
2. Stir in rice and cook 5 minutes. Add broth and bring mixture to boil. Reduce heat to low, cover and simmer 30 minutes.
3. In small saucepan, over low heat, combine milk and cilantro. Bring to simmer. Remove immediately from heat. Stir in turkey, tomatoes and scallions. Fold into rice mixture.
4. Return to heat and cook 1 minute or until risotto is heated througout and creamy. Serve immediately.
5. Serves 4 as a entree or 6 as an appetizer.
