Simmered Taro Potato Recipe
Ingredients :

* 12-16 satoimo (taro potatoes)
* 1 1/2 cup dashi soup stock
* 3 tbsp soy sauce
* 2 tbsp sugar
* 2 tbsp mirin
* 1 tsp sake

​

Method :

​

Cut top and bottom sides of taro potatoes and peel. Boil taro potatoes in a pan. Put dashi soup stock, soy sauce, mirin, sugar, and sake in pan. Add potatoes in the pan and simmer over low heat until soften. Put soy sauce in the pan and simmer until most of the liquid is gone, shaking the pan.

Makes 4 servings
