Norwegian Cookies
Ingredients :

1 cup butter
1 cup sugar
1 egg, beaten
2 cups flour
1 teaspoon almond extract
21-24 marachino cherries, halved

Method :

​

1. Cream butter and sugar together.
2. Add egg and mix well.
3. Stir in flour and almond extract.
4. Chill dough 1 - 2 hours.
5. Make balls the size of small walnuts.
6. Flatten balls on cookie sheet with the bottom of a glass dipped in flour or sugar.
7. Press a half cherry piece onto each cookie.
8. Bake at 350 degrees for 15 minutes, until edges are light brown. Do not overbake.
9. Sprinkle with powdered sugar if desired.

Makes 42-48 cookies. Takes 10 minutes of prep time.
