Goan Rice
Ingredients

2 cup long grain rice, washed and soaked for 30 minutes
1 coconut grated
1 onion chopped finely
1 onion sliced thinly
1/4 cup cashews halved
10-12 almonds halved
2-3 tbsp. ghee
salt to taste

Method

​

1. Add 3 cup boiling water to coconut, cover and keep aside for 30 minutes.
2. Grind to a fine paste, with water, extract milk, keep aside.
3. Heat ghee in a large deep vessel.
4. Add cashews, fry to a light golden, drain, keep aside.
5. Add almonds, fry lightly, drain, keep aside, fry sliced onions, till crisp and brown.
6. Drain well, keep aside.
7. Add chopped onions, stir fry till transparent.
8. Add washed drained rice, coconut milk, salt.
9. Bring to a boil, simmer till rice is cooked, but each grain is separate.
10. Allow all excess moisture to evaporate.
11. Garnish with fried cashews, almonds, onions, just before serving.
12. Serve with goan curry, curd cashew beans curry, solkadi, etc.
