Danish Aebelskiver
Ingredients :

2 cup flour
1 tsp salt
1 tsp baking soda
1 cup sour cream
1 cup milk
or 1 cup buttermilk
1 tsp vanilla
3 x eggs separated
powdered sugar

Method :

* Combine the dry ingredients in a bowl.. Make a well in center and add the yolks and sour cream and milk or buttermilk and mix and blend well. Beat whites till soft peaks and stir into the batter. Heat the pan over medium heat and add a bit of oil or butter to each hole ( or spray with cooking oil ) each time pan is filled. Fill holes 2/3 to 3/4 full. Cook a few minutes and carefully turn to cook other side. This can be a bit tricky until one gets used to doing this. Sometimes a knitting needle is used to lift and turn but I use rim of a spoon to do this. If they come apart, they still will cook up nicely. Cook golden brown. Remove from pan and dust with powdered sugar if desired. Serve with any other syrup or condiment one serves with pancakes. About 7 balls per serving. Recipe makes about 5 to 6 servings.
