Crown Roast of Lamb
Ingredients :

# 1 Crown Roast - 12 cutlets

Stuffing Ingredients :
# 500g (1LB) cooked, mashed sweet potato
# 2 Tbsp sherry
# seasoning to taste
# 1 egg, lightly beaten
# 1 onion, finely chopped
# 1 Tbsp chopped parsley

Method :

Mix all stuffing Ingredients : together. Fill the lamb cavity with stuffing and place roast in a baking dish. Bake at 180C (350F) for 1 hour. Serves 6
