3-Day Mashed Potatoes Recipe
Ingredients

* 5 pounds white potatoes (Yukon Golds it will look polka dotted)
* butter
* salt and white pepper
* 8 ounces small curd cottage cheese
* 4 ounces sour cream
* crushed soda crackers--size of bread crumbs

Methods :

​

Butter casserole dish. Peel, boil and mash potatoes using lots 'o' butter. Flavor with salt and pepper to taste. Stir in the sour cream. Gently fold in the cottage cheese. Put into casserole. Top with a dusting of the crushed crackers and drizzle generously with butter. Cover and refrigerate up to 3 days. To Finish Preheat oven to 350:. Bake uncovered for 30 minutes.
