Cheese Soufflé
Ingredients and Method :

• Melt the butter in a pan with 1 soupspoon of flour.
• When the 2 ingredients are smoothly mixed, add half a glass of boiling milk.
• Remove the mixture from the heat when it sticks to your spoon.
• Add to the mixture 4 egg yolks, one by one.
• Then fold in 4 stiffly beaten egg whites.
• To finish add the 150 gr of grated cheese (Comté).
• Preheat the oven at thermostat 7 (210°C / 410°F).
• Butter a dish for the soufflé.
• Cook in the oven for 15 – 20 minutes.
