Carrot Kheer (Carrot Payasam)
Ingredients

4 Med. sized Carrot
1/2 cup milk
1 1 tin condensed milk
2 1 teaspoon sugar
3 3 tsp. Ghee or Butter
4 Few Cashew nuts
5 Few Almonds
6 cardamom powder
7 saffron (a pinch)

Method :

Peel the carrots, and grate it.In a sauce pan, cook the grated carrot(in a low flame) with milk until the carrot's raw flavor is vanishing.Add cardamom powder. Grind this to a semi-liquid stage. Return mixture to sauce pan, and allow it to boil for 10 minutes (take care it is not thickening), add sugar and stir well. To this add the condensed milk and bring it to boil.Add saffron. Add cashew  nuts and almonds fried in butter. Mix well.

Refrigerate. serve cold.
Very healthy dessert.
