Beef Fajitas
Ingredients :

Marinade:
1 x 12-ounce bottle dark beer
1/2 cup vegetable oil
2 tbl chopped cilantro
2 x jalapenos chopped
2 x cloves garlic minced
1/2 tbl freshly ground black pepper

Steak and vegetables :
1 x 1 1/2- to 2-pound skirt steak
1 x red bell pepper seeded and sliced
1 x yellow bell pepper seeded and sliced
1 x green bell pepper seeded and sliced
2 x onions sliced
vegetable oil
flour tortillas

Method :

* Marinade: In a medium bowl or jar with a lid, combine beer, oil, cilantro, jalapenos, garlic and black pepper, and mix thoroughly to blend. Place steak in a shallow dish and pour in marinade. Cover and marinate overnight.
* Steak and vegetables: Prepare the grill. Remove steak from marinade and season with salt and pepper. Grill the steak over a medium fire 5 minutes per side for medium. While steak is cooking, saute peppers and onions in oil until tender. Season with salt and pepper. When steak is done, thinly slice crosswise on the diagonal.
* Heat tortillas according to package directions. To serve, place four strips of steak, 3 slices bell pepper and 3 slices onions on a tortilla. Roll up and enjoy.
