Badanekyi Palya Recipe
Ingredients

Eggplant (Brinjal/Vazhuthananga)
(medium) - 1 no
Chopped onion(optional) - 1/2 cup
Grated coconut - 2 tbsp
Any masala powder - 1 tsp
Chilly powder - 1 tsp
Salt - As reqd
For seasoning:
Oil - 2 tbsp
Asafoetida(Kayam) - A pinch
Turmeric powder - 1/2 tsp
Curry leaves - A few
Mustard seeds - 1 tsp
Black gram(Uzhunnuparippu) - 1 tsp
Red /green chillies - 2 nos

Method :
​
1)Cut eggplant into small pieces.
2)Heat oil in a pan.
3)Add all the ingredients for seasoning one by one.
4)Add chopped onions and fry till translucent.
5)Add finely cut eggplant and stir fry on a low heat. Don`t cover the pan.
6)Fry till they are cooked.
7)Add salt, chilly powder and masala powder and fry for a few minutes.
8)Add freshly grated coconut and mix well.
:- Serve with plain rice.
