An eel dish
Ingredients :

500 grammes of fresh eel, 1 knob of butter, 3 spoonfuls of oil soffritti.

​

Method :

​

Wash the eel in water and vinegar, cover in flour and then cut it into chunks.

Place the chunks in a circle in a pan full of hot oil and add salt, pepper and a pinch of parsley. Cook covered on a slow heat.

Serve with a sauce of lemon juice.
