Ingredients :

Danish Cucumber Salad
3 x cucumbers (regular, use only one or two if
you use the English or burpless cucumbers)
Salt
1 cup water
1 cup white vinegar (some Danes use lemon juice)
4 tbl sugar
1/2 tsp black pepper

Method :

​

* Wash and peel the cucumbers. Cut into very thin slices, sprinkle lightly with salt and let stand for 15 minutes. Pour off all the liquid. Mix together the water, vinegar, sugar and pepper; pour over the cucumbers and place in the refrigerator for one hour. Drain or serve with a slotted spoon. We always thinly slice some onions into this as well. Vidalias or Walla Walla onions are the best.
* Serves 6 to 8.
